"Baby, it's cold outside" -

...time for Chili.
But wherever you are, in warm or cold weather, Chili's a winner!
Recipes once were more strictly regional, while today more of a mix.
Bloggers' chili recipes are sure to be less regional as well, not to mention that most everyone has their own special way of making it.
While whipping up a pot of chili this cold, snowy morning i used recipe tips from a number of different recipes as well as from personal taste and what was on hand.
RECIPE:
Brown some ground beef -season with salt, black pepper, chili powder, paprika, cumin, oregano and a dash of cider vinegar.
Add diced onion, green pepper, celery, grape tomatoes, and garlic.
Add chicken stock, water and a little white wine (or a combination), cover, then simmer until veggies are cooked.
How much liquid you use depends on how thick you like your Chili.
Add tomato sauce.
Season again - to taste - then simmer 30 minutes or longer.
Add pureed cooked kidney beans(drained & rinsed),
then simmer 10 more minutes.
(Quantities of each ingredient are determined by the cook's taste.)
Serve hot over corn bread and topped with cheese of choice.
