WHEN 'WAFFLING' WINS THE DAY -

It won today in the snowbound north country where the fragrant aroma of spicy, blueberry, walnut waffles filled my cabin air.
...all in all, a welcome change from political waffling permeating the airways.
So, if you've grown weary of campaign waffling, whip up some tasty aromatic waffles. You'll be happy that you did!

This notion will become more and more relevant as we near Super Tuesday voting, then into November's selection for President of the United States.
No matter how vitriolic the campaigning becomes, keep your eye on those who refuse to waffle-to-please. They are genuine leaders.

 QUICK & EASY ONE-POT FEAST -

It's a comfort food, too. Plus that, if you're the creative type, you can vary this basic recipe with ingredients of choice.
RECIPE:
1. Brown sausage in large skillet, then add 1 or 2 cups of water for each one pound of meat used; cover and simmer until meat is cooked through. (Liquid can be part water and white wine.)
2. While that simmers, chop scallions or onion, and garlic. Add to simmering meat. Add salt, pepper & other seasonings to taste.
3. Next, add fresh or frozen mixed vegetables; cover and simmer until just done. Avoid over-cooking.
4. Add enough mashed potatoes or dry flaked potatoes to thicken all.
Heat well and Serve
(Optional: top with grated cheese)
NOTE: There are endless variations to this basic recipe -
For example:
Use meats other than sausage, or with sausage.
Use tomatoes, and green, yellow or red peppers in addition to onion and garlic as meat simmers.
Use other vegetables for step 3.
Use pasta or rice for step 4.
ONE MORE THING !
You could easily transform this to soup by adding water or stock or milk or tomato or veg juice, or, a mix of these items.
